kansas style bbq


I'm working on a recipe for a kansas style honey bbq sauce.  I used it to flavor pulled pork butt for Sunday night dinner -- served as a sandwich on ciabatta bread with my pickled onions and arugula.

Recipe --
1/2 cup ketchup
1/2 cup rice wine vinegar
1/4 cup water
1/4 cup brown sugar
3 tbl tomato paste
2 tbl vegetable oil
2 tbl paprika
1 tbl chili powder
2 cloves garlic, minced
1 tsp cayenne pepper


Mince garlic cloves, and grind to a paste (with a pinch of salt) -- using either the edge of your knife or mortar and pestle if you have one.  Sweat garlic in oil until fragrant and starting to darken in color.  Add spices (chili powder, paprika, cayenne) and brown sugar and cook a few minutes -- this initial cooking starts to extract the natural oils in the spices and caramelize the sugar.  Add tomato paste and cook 1-2 more min, then add remaining ingredients (water, vinegar, ketchup).  Simmer to reduce and thicken -- approx. 15 min.
